Why I never rush a cake.

Dear Friend,

Sometimes the smallest details become the ones we remember forever. A handwritten note. A quiet smile. The way a room suddenly falls silent before the candles are blown out.

Those are the moments I think about every time I bake.

People often ask how long a cake takes to make. The honest answer is that it takes exactly as long as it needs to. A buttercream rose cannot be persuaded to open before it is ready, and neither can the quiet feeling I am trying to fold into every layer.

I have learned to work slowly on purpose. To let the sponge rest. To colour the petals by daylight. To step back, more than once, and simply look.

Every celebration deserves one quiet moment that everyone remembers.

When a cake finally leaves my kitchen, it carries more than sugar and flowers. It carries the hours I spent hoping your day would be everything you dreamed. That is not something you can hurry.
